Collaboration brews are always a fun opportunity t Collaboration brews are always a fun opportunity to use ingredients and techniques that aren’t common, to step out of your comfort zone, and to create something special. While enjoying some libations with Jared from @southerngristbrewing, we were reminiscing on “Kumori,” a rice lager they created in 2019 with our mutual friend Byron from @proper_sake_co. Feeling inspired, we decided to brew HEIKO-FUKUHAKKO, a Yamahai-style sake, koji rice lager brewed in collaboration with Southern Grist and Proper Sake!

Six days before brewing this beer, 400lbs of sushi grade rice was put through a six step mash and cereal cooked, then cooled down and inoculated with Proper Sake’s proprietary strain of koji. The koji went to work converting the starches in the rice into fermentable sugar. After completion, domestic pilsner malt was mashed on top of the rice and put through a further four step mash and short single decoction. 

Once boiled, gently hopped with French grown Strisselspalt, and whirlpooled the wort was split into two fermentation tanks- one pitched with our preferred German lager yeast, and the other with Byron’s preferred sake yeast, banked and propagated by our friends at @bootlegbiology. After fermentation, the two different beers were lagered in French oak ex-wine barrels and blended together before packaging. 

The resulting beer is heavily inspired by Yamahai-Style sake, where the sake brewers naturally inoculate with lactic acid-producing bacteria. Heiko-Fukuhakko, translating to “multiple parallel fermentation,” displays subtle notes of green apple, pear, and steamed rice, is slightly tart and finishes astoundingly dry. 

Heiko-Fukuhakko debuts in our tasting room on draft and in cans TODAY! @takoyakinashville will also be in the house serving up some great food to pair with this draft. See y’all tonight!
Introducing the latest smoked beer from the barrel Introducing the latest smoked beer from the barrels here at Barrique: it’s RAUCH SCHWARZ! 

Schwarzbiers, or black lagers, can be traced back to 1390s Central and Northern Germany, and are known for their drier, roastier profile- a perfect match for some smoke. We mashed Rauch Schwarz using a combination of @weyermann_specialty_malts Barke Pilsner, Munich, Rauchmalt and Carafa malts. Single decocted for some light melanoidin and a fuller, maltier presence, Rauch Schwarz delivers a nice baker’s chocolate with a touch of cold brew flavor that co-mingles with the campfire smoke from our beechwood-smoked malts. 

Rauch Schwarz will be available in cans as well as on draft beginning tomorrow, February 7th! We’ll also have @takoyakinashville in the house serving up food for our release date. 💨💨💨

Our very own bartender Kyle (@seeyouinhellmyfriend) is joining forces with the esteemed @metalandbeerme of @desertdoor once again, to shake the foundations of @vinyltapnashville with the power of black metal. Come bask in the glory of their massive metal record collection and enjoy drink specials all night. Kyle says he’ll buy you a Barrique draft if you show up in corpse paint.

The annual @brewersassoc Craft Brewers Conference The annual @brewersassoc Craft Brewers Conference is returning to Nashville in the spring, and we are very excited to share our plans with y’all!
